Made some English muffin "crackers". I was planning on making bread but the dough didn't rise very much so I decided to just roll them out like crackers. Gotta say, I love how they turned out. Homemade crackers that taste like English muffins, yum. Even better with a little strawberry jam :)
English muffin crackers
1 teaspoon sugar
1/2 cup warm water (120-130 F)
2 1/4 cups gluten-free bread flour (what I used was similar to Bob's Red Mill all purpose but with some yeast in it)
1/2 cup warm milk (120-130 F)
2 tablespoons canola oil
1/2 teaspoon salt
1/4 cup cornmeal
Combine flour, sugar and salt in stand mixer bowl. Add remaining ingredients. Attach bowl and dough hook to mixer. Operate on "stir" until ingredients are combined, about 30 seconds. Stop and scrape bowl. Turn to Speed 2 and mix until smooth, about 3 minutes. Place in lightly greased bowl. Cover; let rise in a warm area 2 hours. Punch down if it has risen.
Preheat oven to 350 F. Divide dough in half and roll out 1/2 at a time between 2 sheets of parchment paper. The thinner it is the more "cracker" like it will be. When it is nearly all rolled out sprinkle with cornmeal and finish rolling. Transfer to a greased jelly roll pan, sprinkle with a little more cornmeal and score if desired. Repeat with other half. Bake for about 8 minutes. Cool completely.
